This is one story I hope my family will not read. Confession: They think I am a great cook but I don’t really do anything. For evenings that have limited time to make dinner, we’re talking ripping open a package is a time contract in a working family’s household, simplicity is key. There’s also taste and health to consider. Here, I am sharing my no-stress grilled vegetable pizza that’s always appreciated with healthy benefits.
Grilled Vegetable Pizza
Serves 2-4
Ingredients:
1 Package Stonefire Artisan Pizza Crust
Small chopped zucchini
Small chopped yellow squash
Diced peppers
10 cherry tomatoes sliced in half
Diced mushrooms
Fresh basil leaves
1/2 cup tomato sauce
5 slices of pepperoni
Olive oil
Italian season and pepper to taste
Directions:
Drizzle vegetables with olive oil and grill for about five minutes.
Tip: Use skewers for less cleanup.
Preheat oven to 425⁰F
Spread tomato sauce over the crust, add vegetables and pepperoni and top with pepper and spices.
Bake for about 5 to 7 minutes.
Remove from oven, top with basil, and serve.
For those who are not lactose-intolerant, add sliced mozzarella or shredded cheese to your preference.
